There are two reasons for this versatility: first, short ribs have lots of delicious beefy fat, and fat means flavor. Second, short ribs have a really fine texture, so when you braise them they get very tender and melt in your mouth. This is all a long way of saying short ribs are the best. The best way to let their bold, savory flavor shine is in a simple ragu sauce made with carrots, onions, some demi-glace or beef stock and whichever red wine youβve chosen to open this evening. We used pappardelle pasta that came pre-folded into a nest shape so it fits well in the starch pan, but you can use any pasta you like.

Adobo is the unofficial national dish of the Philippines. Usually made with pork belly or chicken, this dish renders off an incredibly addictive sauce made with soy sauce, lots of vinegar, and a touch of sugar. Salty, sour, and just a little sweet, this dish is worth making for the sauce alone. Flavored with garlic, peppercorns, and bay leaf the chicken slowly cooks for two hours and then a final broil caramelizes the sugars and further reduces the sauce. Served simply over a bed of plain white rice, youβll be making double batches of this dish before you know it.

Whether served as an appetizer or the main event, this cheesy loaf is a fun and eye-catching twist on pizza while holding on to all of those flavors we love so much. Feel free to try other filling variations such as roasted red pepper or marinated artichoke hearts, just be sure to choose something with a low water content to prevent the bread from getting soggy. And this dish can easily be made vegetarian by simply cutting out the pepperoni. To help keep the bottom of the loaf intact when making slices, lay a wooden spoon or chopstick on either side of the bread to prevent the knife from cutting all of the way through.
Prosciutto Wrapped Blue Cheese Stuffed Dates
We gave traditional bacon wrapped dates, aka devils on horseback, a major makeover. Each date is stuffed with a combination of cream cheese and blue cheese crumbles for a creamy, flavor-packed filling. Once stuffed, the dates are wrapped in thin slices of prosciutto. Each date is then lightly brushed with maple syrup to aid in crisping the prosciutto and to add a layer of earthy sweetness. This dish is the perfect appetizer for your next gathering.
